Kyoto-style sushi involves using fish that is cooked or cured, rather than raw as in the typical nigiri-zushi. Saba-zushi is made using pickled mackerel (鯖魚), hamo-zushi uses pike conger eel (海鰻), and temari-zushi is prepared by rolling sushi into balls and placing an ingredient on top.
